Halloween Caramel Apples

Halloween Caramel Apples

Ingredients 

  • 12 apples (For this recipe, using Granny Smith apples are recommended) 
  • 2 cups brown sugar
  • ½ cup unsalted butter
  • Dash of salt
  • 1 cup light corn syrup
  • Vanilla extract
  • 1 14-ounce can of sweetened condensed milk

  1. Gently wash your apples to get rid of any particles that could still be attached to the peel. We recommend rinsing them with water and a bit of white vinegar for a couple of minutes. Let them air-dry. Alternatively, you can also use a salad spinner. 
  2. Place one stick inside an apple. Push slowly until you reach the core. Be careful not to break the stick
  3. To make the caramel, combine the brown sugar, salt, and corn syrup in your Segretto saucepan. The Segretto Saucepan is available in various colors. But since it’s Halloween, what could be better than to use black to match the spooky vibe? Next, add the butter and heat under medium melted. Be careful not to burn it. 
  4. Add the condensed milk and continue stirring until it reaches 247 degrees (or what we call the hard-ball stage). Once you’ve reached the desired consistency, take it off the heat and add the vanilla extract. Your caramel is ready. 
  5. Now, you can begin dipping those sweet, juicy apples into the caramel. If you want it thicker, dip the apples again. 
  6. Next comes the fun part: decorating your apples! Add all the toppings you want while the caramel is still sticky. 

Spooky Pumpkin Soup

Pumpkin Soup

Ingredients 

  • 140 ml double cream
  • 2 onions
  • 1kg squash or pumpkin, deseeded, peeled, and chopped into small pieces. (Use butternut squash or sugar pumpkin)
  • 720 ml chicken or vegetable stock (You can also use bouillon cubes)
  • 2 tbsps of olive oil

  1. Start by heating the olive oil in a Segretto Dutch Oven. To give it more flavor, you can add a clove of garlic with the oil. Next, cook the onions until translucent. 
  2.  Add the pumpkin or squash. Cook them approximately for eight to ten minutes. Stir them occasionally until soft and golden. 
  3. Pour the chicken stock. Season with salt and pepper. Boil and then simmer until the squash is soft. 
  4. Next, add the double cream. Do not cook for too long to avoid curdling. Mix everything using an immersion blender. 
  5. Serve this spooky pumpkin soup along with your favorite bread!

Veggie Stuffed Scary Peppers

Stuffed Peppers

Ingredients 

  • 4 peppers (Use any color you want) 
  • 1 tbsp of olive oil
  • 1 chopped aubergine 
  • 1 chopped red onion
  • 2 garlic cloves, chopped in small pieces
  • 100 g chopped mushrooms 
  • 1 tbsp tomato paste 
  • 200 g of grain of choice  (rice, quinoa, couscous, etc)

  1.  Prepare the peppers by cutting off the top and removing the seeds. Save the top for later. Take off the whites using a sharp knife. Carve the skin of the peppers to resemble a Jack-o-Lantern.
  2.  Using the Segretto skillet, saute the aubergine, red onion, garlic cloves, and mushrooms together with the olive oil and tomato paste. 
  3.  Mix your cooked grains of choice together with the sauteed vegetables. We recommend that you add a bit of soy sauce if you want an umami taste. 
  4.  Stuff the mixture inside the peppers and cover them with the top that you cut off earlier. Serve and enjoy!
